LOOK STAGE
Claret in colour with a rim of the same colour.
SCENT STAGE
Notes of spice (clove, pepper), brush (thyme) and very ripe red fruits against a backdrop of vanilla.
TASTE STAGE
Rich matter, dense, structured tannins, the spiced aromas evolved well towards a long finish and lasting impression.

Paring
Recommended for haute cuisine, oily fish, red meat, stew.
Technical Data
Grape variety: 100% Tempranillo, the main red variety in Spain.
Protected Geographical Indication: D.O. La Mancha.
Aging: Aged up to 12 months in French (40%) and American oak casks (60%).
Preparation: After destemming, the grapes are vatted at low temperature for 24-48 hours in self-draining tanks where the pre-fermentation maceration of the skins takes place a CO2-saturated atmosphere. Subsequently, the temperature increases, so that alcoholic fermentation takes place at a controlled temperature of 28 ºC. The second fermentation takes place in stainless steel tanks and then the wine is aged in oak casks. To fish, different qualities of wines are blended in order to get the final wine well structured.
